I tested several methods to introduce the water gently into the flour in order to obtain a good mixture. I had the idea of ​​using a syringe and the results are very good. You can also use a spray bottle. These techniques may seem slow but you will be rewarded for your patience.

Remember that you are at home and that you certainly do not have the same equipment, the same accessories, the same ingredients as the baker.
So, we must try to make up for the shortfalls by other techniques.
The mixing of water with dry ingredients must absolutely be done gently.
